Do you ever just get that craving for something rich, dense and chocolaty? Yes? Of course you do, who doesn’t! I’ve come up with this gluten-free, vegan AND low-fat recipe to satisfy all of your healthy chocolate wishes.
Ingredients:
- 1 cup of gluten free all purpose flour
- 1 cup of Rude Health Oats
- 1 cup of black beans
- ¾ cup coconut sugar
- ¾ cup cacao powder
- 1tsp baking powder
- 1 cup of aquafaba (chickpea can water)
- ¼ cup Almond Milk
Step 1: Measure out 1 cup of oats and blend until a floury consistency, then add to a large mixing bowl along with all of the other dry ingredients: the all purpose flour, sugar, cacao powder and baking powder.
Step 2: Next measure out 1 cup of black beans (about ¾ cup) and blend until a puree consistency
Step 3: Now this is the cool part: the aquafaba. Aquafaba is essentially the water that comes with white beans in their tin, the best results are with chickpea water, and it can act as a basic egg replacer in many vegan recipes. First drain the chickpeas and collect 1 cup of the liquid in a large bowl and use an electric whisk to whisk the liquid like you would egg whites. After about 3 minutes the consistency begins to change to look exactly like a meringue mix, full of air and holding still peaks.
Step 4: Add the beans and almond milk to the bowl of dry ingredients and then fold in the foamy aquafaba.
Step 5: Now if you like a bit of crunch or some more melty chocolate, now is the time to chuck in a handful of chocolate chips or walnuts.
Step 6: Bake at 175 degrees for about 18 minutes and enjoy!
